CJ Leghorns opened Summer 2002 to rave reviews. The hot buttered buns were an instant hit, as was the great new menu, with a little something for everyone. Families have come to love CJs for its inexpensive kids menu, fun coloring animals at the table, and a more relaxed atmosphere. The espresso bar and ice-creamery filled a niche in Lynden with hard ice cream sundaes and shakes and a Seattle Coffee House feel in the country.
